Vegan carrot pancakes with pumpkin seed protein

Recipe for 10 small pancakes

Ingredients:
✓ 1 carrot
✓ 100g unsweetened apple puree
✓ 125mL oat milk
✓ 100g spelt flour
✓ 50g pumpkin seed protein
✓ 1 tsp baking powder
✓ 1 pinch of cinnamon
✓ Oil for frying the pancakes

Optional: Depending on your preference, 1-2 tablespoons coconut blossom sugar or other sweetener

Suitable toppings: maple syrup, vegan cream cheese or jam

⏰ 20 minutes preparation time


Preparation:

  1. Finely grate the carrot and mix with apple puree and oat milk.
  2. Add the flour, pumpkin seed protein, baking powder and cinnamon and mix into a smooth dough.
  3. Let the dough rest for a few minutes.
  4. Heat a pan with a little oil. Add the dough to the pan in portions, spread a little if necessary, and fry for 2-3 minutes on each side.
  5. Serve pancakes with topping of your choice.
