Preparation of Palmiers with Coconut Blossom Sugar

1. Preheat the oven : Preheat the oven to 200 degrees Celsius.

2. Prepare the nut mixture : Finely chop the walnuts in a food processor or with a knife. Then add the Lotao coconut blossom sugar, brown sugar and cinnamon to the walnuts and mix everything well. Set this mixture aside.

3. Prepare the puff pastry : Roll out the puff pastry on a work surface.

4. Spread the nut mixture : Spread the prepared nut mixture evenly on both sides of the puff pastry. Roll over it lightly with a rolling pin to press the nut mixture into the puff pastry.

5. Fold the puff pastry : Fold the long sides of the puff pastry in to the middle. Repeat this step once more to form a roll.

6. Cut the roll : Use a sharp knife to cut the resulting roll into slices about 1 cm thick.

7. Baking : Place the palmiers on a baking sheet lined with baking paper. Bake the palmiers for 6-8 minutes, then flip and bake the other side for 6-8 minutes until golden brown and crispy.

8. Allow to cool : Remove the palmiers from the oven and place them on a wire rack to cool completely.
