Ingredients for 2-3 people:
✓ 50g Lotao Veggie Mince
✓ 1 red onion
✓ 1 clove of garlic
✓ Salt, pepper, paprika powder
✓ 1 avocado
✓ 2 00g cherry tomatoes
✓ 1/2 bunch of coriander
✓ 8 taco shells, hard or soft
✓ Lime wedges
Preparation:
Soak the veggie mince according to the package instructions. Finely chop half an onion and garlic. Sauté with a little oil in a pan over medium heat, then fry for another 5 minutes with the drained veggie mince until crispy. Finally season with salt, pepper and paprika powder.
Cut half the onion, avocado and tomatoes into small pieces. Roughly chop the coriander.
Reheat taco shells according to cooking instructions. Fill with a spoonful each of the veggie mince, avocado and tomato. Serve drizzled with a little coriander and a squeeze of lime juice.
