Vegan Jackfruit Balls - One-Pot Recipe : The new Lotao Jackfruit Veggie Balls are a vegan, spicy-exotic variation of the classic meatball . They are made directly in our Indian cooperative and are ready to use . The fine-fiber balls are firm to the bite and juicy and can be used in the same way as regular meat balls. In the stew presented here, they come into their own in terms of taste - in combination with borlotti beans and tomatoes .
Ingredients:
- 150g Lotao Green Veggie Balls
- 1 gr. onion, diced
- 4 cloves of garlic
- 4 carrots, diced
- 4 Fresh Tomatoes
- 1 can of peeled tomatoes
- 1 tbsp tomato paste
- 150 ml vegetable soup
- 1 tsp smoked red pepper
- 1 sprig of thyme
- 1 can of borlotti beans (240 g)
- Salt pepper
- 1 tbsp Java Kiss coconut blossom sugar
Preparation:
- Preheat the oven to 180 degrees. Fry the jackfruit veggie balls in a pan with plenty of oil until crispy and set aside. Sauté onion, garlic and carrots, add fresh tomatoes, canned tomatoes and tomato paste.
- Season with smoked paprika powder, coconut blossom sugar , salt and pepper. Close the pot and simmer in the oven at 180 degrees for 15 minutes.
- Add the borlotti beans and roast in the oven for another 15 minutes. Serve garnished with Curcuma Sun rice and fresh herbs. Bon appetit!
