Vegan Lasagna with Veggie Mince

Ingredients for 2 people:

For the sauce:

✓ 75 g Lotao Veggie Mince
✓ 6-8 lasagna sheets
✓ 1 onion
✓ 1 clove of garlic
✓ ½ celery stick
✓ ½ carrot
✓ 500 g strained tomatoes
✓ 1 tbsp tomato paste
✓ Spices: salt, pepper, dried basil, oregano

For the béchamel sauce:

300 ml soy milk
✓ 20 g vegan butter
✓ 40 g flour
✓ Nutmeg to taste
✓ Vegan grated cheese for gratinating

Preparation time : 25-35 minutes preparation + 35-40 minutes baking time

Preparation:

1. Prepare the tomato sauce: Finely chop the onion and garlic and fry in a little oil until translucent. Chop the carrot and celery into small pieces, add and fry for about 5 minutes. Then add the tomato paste and fry briefly.

2. Add veggie mince: Prepare the Lotao veggie mince according to the instructions on the packet and add it to the vegetable and tomato mixture in the pan. Fry briefly and then deglaze with the strained tomatoes. Season the sauce with salt, pepper, basil and oregano and simmer covered at a low heat for about 30 minutes.

3. Make the béchamel sauce: Melt the vegan butter in a small saucepan, add the flour and fry while stirring. Gradually stir in the soy milk until a creamy sauce is formed. Season with nutmeg.

4. Layer the lasagne: Grease a baking dish and start with a layer of tomato sauce. Then place the lasagne sheets on top, add more tomato sauce, béchamel sauce and a small amount of vegan grated cheese. Repeat this process until all the ingredients are used up and finish the lasagne with a layer of béchamel sauce and grated cheese.

5. Baking: Bake the lasagne in the oven at 220 °C (top/bottom heat) for 35-40 minutes. Cover with aluminum foil for the first 20 minutes, then remove the foil so that the cheese turns golden brown.
