Ingredients for 4 servings:
✓ 200g red lentils
✓ 75g Lotao Veggie Mince
✓ 1 can of chopped tomatoes (400g)
✓ 1 can of coconut milk (400ml)
✓ 600ml vegetable broth
✓ 1 onion
✓ 2 tsp turmeric
✓ 2 tsp chili powder
✓ Oil
✓ Salt & Pepper
Optional:
✓ Cream vega
✓ Fresh herbs, e.g. coriander
✓ Toasted bread
Preparation:
1. Pour 375ml of boiling water or vegetable broth over the veggie mince and let it swell for about 2 minutes. Then let it drain briefly.
2. Peel and dice the onion and fry it in oil in a pot.
3. Add tomatoes, coconut milk, washed lentils, turmeric and chili powder. Stir everything well and let it sweat briefly.
4. Add the vegetable broth and veggie mince and let the soup simmer for 10-12 minutes so that the lentils still have a pleasant bite.
5. Season the soup with salt and pepper and serve.
The finished soup can be refined with fresh herbs as desired; coriander is an excellent companion here. Ciabatta or baguette goes well with this.
